Creamy chicken korma garnished with almonds, coriander and saffron.

Korma

Korma is the 'aristocrat' of the curry world. Originating in the royal 'Mughlai' kitchens of the 16th century, it was designed to be a mild, luxurious, and highly aromatic experience. Unlike the fiery heat of a Madras or the tang of a Jalfrezi, Korma is defined by its creamy, nut-based sauce and its delicate use of 'sweet' spices. It is the ultimate 'comfort' dish for those who prefer fragrance and richness over chili burn.

Cooking Instructions

Preparation: 10 minutes
Cooking: 20 minutes
Servings: 3 to 4

Notes:

Chicken thighs can be used as a juicier alternative to chicken breasts.

Ghee provides an authentic rich flavour, but sunflower oil or vegetable oil can be used instead.

Coconut milk can replace coconut cream for a lighter sauce consistency.

Adjust the sugar slightly to taste to achieve the desired balance of gentle sweetness.

Sauté Onions and Seal Chicken
Heat the ghee in a large frying pan over medium heat. Add the finely diced onion and cook for 5 minutes, stirring occasionally, until softened. Add the chopped chicken breast chunks and cook for 5 minutes until sealed on all sides.

Add Aromatics and Spices
Stir in the minced garlic, minced ginger, ground cumin, ground coriander, garam masala, mild chilli powder, ground turmeric, salt, white pepper, and tomato puree. Cook for 2 to 3 minutes, stirring constantly to coat the chicken and release the spice aromas.

Simmer Creamy Sauce
Add the full-fat plain yoghurt, coconut cream, ground almonds, and sugar. Stir well to combine, bring to a gentle simmer, and cook over medium-low heat for 6 to 8 minutes until the chicken is cooked through.

Finish and Serve
Stir in the double cream and heat through for 1 minute. Remove from heat, garnish with freshly chopped coriander, and serve hot with boiled rice and warm naan.
